This time, I visited TOKYO BAGEL LAB, a bagel specialty shop located in Okubo, Shinjuku, and picked up several of their popular fusion bagels for takeout.
Here’s a closer look at the shop and the bagels I tried.

TOKYO BAGEL LAB: A Korean Bagel Specialty Shop in Shin-Okubo

TOKYO BAGEL LAB is a Korean-style bagel specialty shop that opened on February 12, 2026.
The brand concept is “A new bagel culture to enjoy in Tokyo.”
The shop operates takeout-only and does not offer an eat-in space.
The bagels are based on a chewy New York–style bagel, combined with a variety of fusion flavors such as:
- Dubai-style pistachio
- Matcha
- Korean-style bulgogi
- Rich cream cheese
In total, the shop offers 29 different varieties of fusion bagels.
The shop is located along Shokuan-dori Street in Shin-Okubo, an area known as Tokyo’s Koreatown.
Nearby on the same street are several Korean-themed stores, including:
- TOPmart, a Korean supermarket
- ABEBE BAKERY JEJU×TOKYO, known for Korean-style donuts
I visited the shop for the first time around 2:00 p.m. on a weekend.
Interior and Takeout Menu

Inside TOKYO BAGEL LAB, bagels are displayed on tables in the center and along the walls.
Customers select items themselves in a self-service style similar to a bakery.

The shop also offers five types of dipping creams that can be paired with a regular bagel.
In addition to bagels, takeout drinks such as café latte and Americano are also available.

Tasting the Fusion Bagels

For this visit, I took out the following items:
- Plain
- Oreo
- Honeycomb Cream Cheese
- Chive Bacon
- Pistachio Kadaif cream (dip)
Plain Bagel — 352 yen

The plain bagel is simple and slightly salty, with a lighter chewiness than expected.
Because the butter flavor is mild, it works well when paired with a dipping cream.
Pistachio Kadaif Cream — 463 yen

The pistachio kadaif cream contains crispy kadaif pastry, which is also used in Dubai-style chocolate desserts.
It has a distinctive crunchy texture and a rich pistachio flavor combined with sweetness from sugar.
Honeycomb Cream Cheese — 704 yen

The honeycomb cream cheese bagel combines the sweetness of honey with smooth cream cheese.
The generous amount of cream cheese pairs extremely well with the bagel.
Oreo Bagel — 574 yen

The Oreo bagel contains mousse-like chocolate, white chocolate, and Oreo pieces.
It is not overly sweet and matches well with the bagel dough.
Chive Bacon Bagel — 574 yen

The chive bacon bagel features a slightly sweet cream filling combined with chives.
The chives add a unique accent, and the flavor reminded me somewhat of a creamy white stew. Among the bagels I tried, this was the most surprising combination and my personal favorite.
